Recipes: Low-Fat Tortilla Pizza

Food & Drink

I have discovered a new love for cooking, and although I’m not particularly great at it (yet), I enjoy trying out new recipes, and hopefully creating something that is tasty. Now as someone who is always looking for a healthier alternative to some of my favourite foods, I have found a fantastic way to enjoy pizza but still have all of that delicious flavour. Low-Fat Tortilla Pizza’s are a healthy alternative to doughy pizza. Like so many other people dough tends to bloat me, but with these Tortilla Pizza’s I can enjoy my fave pizza without the awful stodgy feeling after!

Ingredients – Makes 2

  • Tortilla Wraps – I like to use Sainsbury’s Be Good To Yourself Tortilla Wraps
  • Passata (160g is plenty)
  • Oregano
  • Low Fat Mozzarella 60 g – I use Sainsbury’s Be Good To Yourself Mozzarella Ball
  • Serrano Ham (4 slices)
  • Mushrooms
  • Red Pepper
  • Pineapple Chunks or Rings
  • Piquante Peppers
  • Rocket

  • Pizza Tray

1 – Start by pre-heating your oven to 200 degrees Celsius or to Gas Mark 6.

2 – To start I finely chop the mushrooms, red pepper, piquante peppers (you can leave whole if you prefer), and pineapple rings. You will notice I haven’t stated how many of each ingredient I use, as I think it is all down to how you like it, if you want more mushrooms, add more mushrooms!

3 – Next pour some passata into a bowl, depending on how many tortilla pizza’s you’re making, I usually use about a third of a 500g carton, approx. 160g for 4 pizza’s.

4 – Next sprinkle some Oregano into your passata and mix with a spoon. This is all down to personal preference, if you only like a subtle flavour of Oregano only add a teaspoon, if you like it to stand out more, add accordingly.

5 – Place a tortilla wrap onto a pizza tray and spoon your passata mix onto the tortilla. With the back of a spoon spread the passata mix to the edges of your tortilla with a nice even coverage.

6 – Cut your Mozzarella Ball in half, and then tear one half into strips. Place your Mozzarella strips evenly across your tortilla base. Half of a Mozzarella Ball is plenty for 2 tortilla pizza’s, of course if you love a cheesy pizza add as much as you wish.

7 – Then add your chopped mushrooms, red pepper, piquante peppers and pineapple rings.

8 – Tear your Serrano Ham slices into small pieces and layer on top.

9 – Carefully place  your pizza tray in the oven for around 12-15 minutes or until golden brown and crunchy – no one likes soggy pizza.

10 – Once golden remove from the oven and pizza tray, and enjoy 🙂 – I like to serve mine with rocket and chilli oil, delish!
